Texas Hot Corn - This a favorite for Pot Lucks
I met many wonderful people in Texas and I am honored to call them my work family, my friends, the missing piece of heart. Texas Hot Corn comes from all the gatherings outside of work with these Texas women, as a family, each taking turns to host. We had get together, dinners and fun times, enjoying every moment in each others company. This dish was made by a few of us and we all wanted to try each others and get that darn consistency right. Those ladies and gents know how to cook ! I've even made this into a dip when it got too hot !
How hot do you like it ? You can never tell with jalapeno's the measure of their strength. I've made this so hot, I could only serve it to firemen. Give fair warning if it's for a pot luck, the hot spice from the peppers can sneak up on you and what's worse, no one expects it so they get very surprised ! I add peppers and wait 5 min then taste, if not hot enough for me I'll add more.
4 cans Sweet Corn
1 cube butter / 1/2 cup
1 -8oz cream cheese
1/2 cup chopped onions
4 to 5 jalapeno peppers ( cored)
Add jalapeno's with seeds for hotter/spicy corn._

In a sauce pan or pot on medium heat saute' butter and onions,
about 5 minutes or cooked to clear and almost soft, add cream cheese, blend into mix.
Constant stirring until cream cheese is melted, blended with onions. Stir in corn, one can at a time, until well coated with cream cheese. Remove from heat, and add Peppers to taste.
You can also use a crock pot placing everything in and turning it on high until its melted,
reduce to low and let cook until done.
