Avocado Onion Rings
Ingredients for Avocado Mixture
4 to 5 avocados 1 lime 1/2 cup to 1 cup pico de gallo 1/2 cup cilantro 1 tsp salt 2 to 3 onions Mash avocados, squeeze lime juice over the avocados and mix remaining ingredients together, set aside. Cut onion to 1/2 inch slices, separate into rings and place on wax paper or plastic wrap lined tray. Fill each ring with avocado mixture and sprinkle any hot spice you like to give it a small kick. Freeze until solid, about 1 to 2 hours.
In 3 separate bowls, flour in one, 2 or three beaten eggs in second bowl and third bowl with panko bread crumbs. Dip frozen rings removed from freezer while still frozen, in flour, egg then bread crumbs. Coat a second time, the egg and bread crumbs.
Serve with Sour Cream, Salsa or Cheese dip.
We were so excited after making these we didn't get a pic of the finished rings !! You can experiment with the recipe, have fun. I added 1/2 cup total of chopped up red and yellow bell pepper and green onion. You can substitute chopped tomatoes, onion, and peppers for the pico de gallo. Fry in batches until golden brown (use oil of your choice) Place on paper towel-lined plate to drain excess oil. Sprinkle with more of your favorite hot spice
